A chicken casserole recipe from my mum, with chicken, rice, zucchini, and other vegetables and cheese.
INGREDIENTS:
4 tbsp. Olive Oil (other oils are fine, I love olive oils. )
2 cups onions-chopped
3-4 garlic cloves-minced
3 cups zucchini-diced
2 cups mushrooms-sliced
3 cups chicken-cooked & diced
1 cup uncooked brown or white rice
1 1/2 cups chicken broth or water
1 cup white wine
1 1/2 tsp. fresh thyme (or 1/2 tsp. dried)
1/2 tsp. rosemary
1/2 cup grated Parmesan cheese
salt and pepper
2 cups chopped tomatoes
1/4 tsp. chili powder
1/4 cup fresh fine chopped parsely
Approx 5 tbsp fine chopped cannabis buds or 4-5 tbspn of cannabutter
PREPARATION:
Heat 3 tbsp. of the oil in a large saute pan, and saute 1 cup of the onions with the garlic for 2 minutes.
Add the zucchini and mushrooms, and saute for 3 minutes more.
Combine the vegetables with the chicken, rice, broth, wine, spices, and the cheese along with cannabis or cannabutter.
Mix and season to taste with salt & pepper.
Place this mixture in a greased 9x13 baking dish.
Heat the remaining 1 tbsp. oil, and saute the remaining cup of onions for 3 minutes.
Add the tomatoes and chili powder.
Again, check if need to season to taste with salt and pepper.
Spoon the topping over the rice and chicken mixture.
Bake at 350F/180ishC degrees for 1 hour.
Serve hot. And a glass of nice wine!
Comments:
I personally find this dish very easy to make, and the THC effects came up slowly, then suddenly hits with BAM! force, maybe it's because I drank almost a botle of red wine along with this meal and it increased the effects.
Very tasty, very slight weak canna-taste. _________________ "Travel is fatal to prejudice, bigotry, and narrow-mindedness, and many of our people need it sorely on these accounts.
