My wife started using this recipe about five years ago and it's been a favorite of mine since then. Smile

Since this recipe uses bacon fat and heavy cream, I'm sure that one would be able to add a few grams of bud into the mix if desired.

Here's the recipe:

Baked Potato Soup

Ingredients:

3-5 Potatoes, peeled, Baked (cubed)
8 Slices Bacon
Onion 1 cup, diced
Flour - 2/3 cup
Chicken Broth - 6 cups
Half & Half Cream - 2 cups

Parsley (fresh) - 1/4 cup
Garlic (crushed) - 1 teaspoon (or more)
Basil - 1 teaspoon
Black Pepper - 1 teaspoon
Tabasco Sauce - To taste

Cheddar Cheese (grated) - 1 cup

Bake 3 to 5 potatoes. Peel & cube.

Fry the bacon in a skillet under medium heat.
Remove the bacon, leaving the drippings.

Over medium heat, saute the onions until translucent... a couple of minutes.

Next, add the flour and cook until it is a golden color ~ 5 minutes.

Add 6-cups of chicken broth, whisking it into the flour mixture.
Let this mixture cook until it starts to thicken.

Next, add the half & half cream, diced baked potatoes, crumbled bacon, parsley, basil, garlic, black pepper and Tabasco sauce.

Simmer approx. 10 minutes until desired thickness.

Lastly, add 1 cup of grated cheddar cheese until disolved. The soup is done.
